Calling All Foodies!

I worked as a chef in restaurants, hotels and private homes for decades, always putting my career before everything else. But in 2010, I was diagnosed with Multiple Sclerosis. I realized that I was not invincible and I needed to take care of my health!

On my personal wellness quest, I re-discovered kale which has recently been tagged as a superfood, a powerhouse of antioxidants and nutrients. In the food service industry, we used to use kale only as a garnish for displays, but you weren’t supposed to eat it!

I combined my knowledge as a seasoned chef with kale’s humble rise to fame and created my version of haute cuisine kale chips using Lacinato kale. I bake my kale chips using a cutting edge technique, instead of traditionally dehydrating them, which would limit the flavor possibilities.

Raw vs. Cooked

You may have heard about the benefits of a raw food diet, but did you know that many nutritionists say there are also benefits to briefly cooking cruciferous vegetables like kale, broccoli and Brussels sprouts, which begins to break down the cellular structure making it easier to digest.

For thousands of years humans have been cooking food. Personally, I think a balance of cooked and raw foods is beneficial for proper nutrition and to keep your taste buds excited.
